Low Carb Bacon Cheeseburger Casserole

Ingredients

  • 1 ½ lbs 80% ground beef
  • 1 Medium onion, chopped (about ¾ cup)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1 tbsp Worcestershire sauce
  • 1 can Rotel diced tomatoes & green chilies, drained (10 oz)
  • 1 cup Pepper jack cheese, shredded
  • 1 cup Cheddar cheese, shredded
  • 5 slices Cooked bacon
  • ½ cup Dill pickles, chopped

Instructions

  • Preheat oven to 400℉
  • In large skillet, cook ground beef over medium high heat until no longer pink. Drain excess fat.
  • Reduce heat to medium and add onion, salt, pepper, garlic and chili powder. Stir well and cook until onions are soft, about 3-5 minutes.
  • Add Worcestershire sauce and diced tomatoes (drained), stir to combine.
  • Pour half of the beef mixture into 9×9 glass baking dish. Sprinkle with half the pepper jack, cheddar, bacon and chopped pickles. Pour remaining beef mixture and top with remaining cheese, bacon and pickles.
  • Bake uncovered for 10 minutes or until cheese is bubbly.

Notes

This casserole is great without any additional condiments, but feel free to add mustard, low carb ketchup or mayonnaise!
