Low Carb Caprese Skewers

These Low Carb Caprese Skewers recipe with fresh tomatoes, mozzarella, and basil are the perfect appetizer for a summer get-together!

Ingredients

  • 4 oz Mozzarella pearls (about 45)
  • ¼ cup Olive oil
  • ½ tsp Italian seasoning
  • ¼ tsp Garlic powder
  • 15 Cherry or Grape Tomatoes
  • ¼ cup Balsamic Vinegar
  • 30 small Basil leaves or 15 large, cut in half

Instructions

  • Combine olive oil, Italian seasoning and garlic in small bowl. Add mozzarella and marinade for at least 30 minutes.
  • Cut grape or cherry tomatoes in half. Marinate in balsamic vinegar for 30 minutes.
  • Discard leftover marinades.
  • Thread skewers as follows: mozzarella pearl, tomato half, basil leaf, mozzarella pearl, tomato half, mozzarella pearl, basil leaf.

Notes

While the recipe calls for 1/4 cup of olive oil and balsamic vinegar, I measured after marinating and found that only one tablespoon was absorbed for each. I used this measure to calculate the nutrition information.
