Low Carb Chicken Parmesan
Ingredients
- 1 Egg
- 4 Skinless, boneless chicken breasts about 1 pound
- ½ cup Pork rind crumbs
- 2 tbsp Butter
- 2 cups Rao's pasta sauce or other low carb sauce
- ½ cup Mozzarella cheese shredded, about 2 ounces
- 2 tbsp Parmesan cheese grated
Instructions
- In a shallow dish, beat egg. Dip chicken into egg and coat with pork rind crumbs.
- In a skillet over medium heat, melt butter. Add chicken and cook 10 minutes or until browned on both sides. Remove chicken and set aside.
- In same skillet, heat pasta sauce to boiling. Return chicken to skillet and reduce heat to low. Cover and cook for 5 minutes or until chicken is no longer pink, stirring occasionally.
- Sprinkle with mozzarella and Parmesan cheeses. Cover and cook until cheese is melted.
