Low Carb Chocolate Peanut Butter Bars
Ingredients
- ¾ Cup Skippy's Natural Creamy Peanut Butter or other natural peanut butter
- ¼ Cup Raw Honey
- 2 Tbsp Butter, melted
- 1 Tsp Vanilla Extract
- ⅓ Cup Ground Flaxseed Meal
- ½ Cup Vital Proteins Collagen Peptides or other unflavored protein powder
- 1 ½ Oz Lily's Dark Chocolate Baking Chips or other low carb chocolate
Instructions
- In a medium bowl, mix peanut butter, honey, butter and vanilla until smooth. Add ground flaxseed and protein powder. Use a spoon (or clean hands) to mix until thoroughly combined.
- Line a 9×5 inch loaf pan with parchment paper. Press dough into bottom. Freeze for 10 minutes or refrigerate for 30 minutes.
- Melt chocolate over low heat in a saucepan, or melt in microwave in 10-15 second bursts, stirring in between. Pour over dough, tilting the pan so chocolate is evenly distributed.
- Place bars back in refrigerator for at least 30 minutes for chocolate to set. Once set, gently remove the block from the pan and place chocolate side down on parchment paper. Cut into 12 squares.
- Store covered in refrigerator until ready to eat.
