This Low Carb Jello Mousse enhances the berry flavors for a delicious, light and fruity treat you can enjoy as a snack or healthy low carb dessert.

With just three ingredients — sugar-free Jello, Cool Whip and berries — this Low Carb Jello Mousse is quick and easy to make. You can mix and match fruits and Jello flavors to make it different every time! Other great Jello flavors to try in this mousse are raspberry, blueberry, cherry or strawberry banana.

You can use fresh berries if you have them available, but I’ve found frozen berries to be super-convenient. I buy a large bag at the wholesale club and freeze the berries into recipe-sized portions. Then I just thaw the berries alongside the Cool Whip and I’m ready to go!

Low Carb Jello Mousse

Light, fruity and refreshing! This easy to make mousse makes a satisfying low carb snack or dessert!

Ingredients

  • 1 pkg Strawberry (or any berry flavor) Sugar Free Jello .3 oz size
  • ¾ cup Boiling water
  • 1 ½ cups Cool Whip
  • 1 ½ cups Strawberries, unsweetened
  • 1 cup Ice

Instructions

  • Stir boiling water into dry gelatin mix in medium bowl until completely dissolved
  • Add ice cubes; stir until completely melted. Remove any ice chips that don't melt.
  • Fold in Cool Whip until blended and mix in strawberries.
  • Divide among six dessert dishes. Refrigerate one hour or until firm.
