Low Carb Jello Mousse

Most fruits are a no-no when following a low carb diet due to their high sugar content. However, the fiber in strawberries, raspberries, blackberries and blueberries make them a delicious exception! This Low Carb Jello Mousse enhances the berry flavors for a delicious, light and fruity treat you can enjoy as a snack or healthy low carb dessert.

With just three ingredients — sugar-free Jello, Cool Whip and berries — this Low Carb Jello Mousse is quick and easy to make. You can mix and match fruits and Jello flavors to make it different every time! Other great Jello flavors to try in this mousse are raspberry, blueberry, cherry or strawberry banana.

You can use fresh berries if you have them available, but I’ve found frozen berries to be super-convenient. I buy a large bag at the wholesale club and freeze the berries into recipe-sized portions. Then I just thaw the berries alongside the Cool Whip and I’m ready to go!

I recommend using dessert dishes with lids, like these Anchor Hocking 6 Ounce Custard Cups*. They look great and make storing a breeze.
