Perfectly portioned and packed with flavor, these Low Carb Mini Meatloaves are sure to become a staple in your recipe collection. These little delights are a modern twist on the classic comfort food, combining rich flavors and wholesome ingredients to create a dish that’s both comforting and guilt-free.
The base of these meatloaves starts with ground beef, providing a hearty and flavorful foundation. I swapped out traditional breadcrumbs for crushed pork rinds. This not only keeps the carb count low but also adds a fantastic crunchy texture. You’ll be amazed at how well pork rinds work as a binder, giving the meatloaf that perfect consistency without the need for grains.
To enhance the flavor, we incorporate finely chopped onion, which adds a subtle sweetness and moisture to the meatloaf mixture. A splash of Worcestershire sauce brings a deep, umami richness that perfectly complements the beef. Finally, mix in evaporated milk for an extra touch of creaminess. This helps keep the meatloaf tender and juicy.

One of the standout ingredients in this recipe is the Primal Health Low Carb Ketchup. This ketchup offers the tangy sweetness of traditional ketchup without the added sugars. I use it as a glaze on top of the mini meatloaves, creating a beautiful caramelized layer that adds a burst of flavor with every bite.

I usually run in the opposite direction when someone mentions meatloaf but not this one. Pip mentioned how good it was and I will make them
