When Winter arrives in our household, out comes the slow cooker! There is just something about coming home to a warm meal when it’s cold and dark outside. This Pork with Creamy Mustard Sauce recipe makes a decadent week-night meal. Plus, it only requires about 15 minutes in the morning to prepare!

Also known as “the other white meat,” pork often gets overlooked as a low carb source of protein. One serving of this Pork with Creamy Mustard Sauce recipe provides 36 grams of protein with just 4 grams of net carbs! While the carrots add flavor and color, you can eliminate them to reduce the carbs even further. You can also substitute chicken broth for the white wine.

Ingredients

  • 2 ½ – 3 lb boneless pork sirloin roast
  • 1 tbsp olive oil
  • ¾ cup dry white wine (or chicken broth)
  • 2 tbsp flour
  • 1 tsp salt
  • 1 tsp pepper
  • 2 medium carrots finely chopped
  • 1 medium onion finely chopped
  • ¼ cup heavy cream
  • 3 tbsp dijon mustard

Instructions

  • Trim any excess fat from pork. Heat oil in 10-inch skillet over medium-high heat. Cook pork for about 10 minutes, turning occasionally, until brown on all sides.
  • Place pork in slow cooker. Mix together wine (or broth), flour, salt, pepper, carrots and onion. Pour over pork.
  • Cover and cook on low setting for 8 hours or until pork is tender.
  • Remove pork from cooker; cover and keep warm. Skim fat from liquid in cooker if desired. Stir heavy cream and mustard into liquid. Cover and cook on high setting for about 15 minutes or until slightly thickened. Serve sauce with pork.
