Ah, Swedish Meatballs. Tender spheres of savory goodness nestled in a creamy, dreamy sauce. They’re a symbol of cozy nights and get-togethers, but for those following a low carb lifestyle, they can feel off limits. These Slow Cooker Swedish Meatballs bring all the nostalgic flavors with a low carb count and hands-off approach.
Slow Cooker Swedish Meatballs are perfect for busy weeknights, potlucks, and parties. Want to add a touch of heat? Throw in some red pepper flakes. Craving more veggies? Saute some mushrooms or onions to add alongside the meatballs. And the best part? Cleanup is a breeze thanks to your trusty slow cooker.
I used frozen meatballs (Swedish style) to make these dish as simple as possible. Be sure to check the nutrition labels before buying to ensure the meatballs you use have a low carb count — or make your own! Condensed soups are the secret ingredient — I used two cans of Cream of Chicken, but you could also mix and match with Cream of Celery or Cream of Mushroom for a similar carb count.
