Ingredients
1 ½lbs80% ground beef
1Medium onion, chopped(about ¾ cup)
1tspSalt
1tspPepper
1tspGarlic powder
1tspChili powder
1tbspWorcestershire sauce
1canRotel diced tomatoes & green chilies, drained(10 oz)
1cupPepper jack cheese, shredded
1cupCheddar cheese, shredded
5slicesCooked bacon
½cupDill pickles, chopped
Instructions
Preheat oven to 400℉
In large skillet, cook ground beef over medium high heat until no longer pink. Drain excess fat.
Reduce heat to medium and add onion, salt, pepper, garlic and chili powder. Stir well and cook until onions are soft, about 3-5 minutes.
Add Worcestershire sauce and diced tomatoes (drained), stir to combine.
Pour half of the beef mixture into 9x9 glass baking dish. Sprinkle with half the pepper jack, cheddar, bacon and chopped pickles. Pour remaining beef mixture and top with remaining cheese, bacon and pickles.
Bake uncovered for 10 minutes or until cheese is bubbly.
Notes
This casserole is great without any additional condiments, but feel free to add mustard, low carb ketchup or mayonnaise!
