Ingredients
2 ½ - 3lbboneless pork sirloin roast
1tbspolive oil
¾cupdry white wine(or chicken broth)
2tbspflour
1tspsalt
1tsppepper
2mediumcarrotsfinely chopped
1mediumonionfinely chopped
¼cupheavy cream
3tbspdijon mustard
Instructions
Trim any excess fat from pork. Heat oil in 10-inch skillet over medium-high heat. Cook pork for about 10 minutes, turning occasionally, until brown on all sides.
Place pork in slow cooker. Mix together wine (or broth), flour, salt, pepper, carrots and onion. Pour over pork.
Cover and cook on low setting for 8 hours or until pork is tender.
Remove pork from cooker; cover and keep warm. Skim fat from liquid in cooker if desired. Stir heavy cream and mustard into liquid. Cover and cook on high setting for about 15 minutes or until slightly thickened. Serve sauce with pork.
